Serves 4

Ingredients

  • 400g linguiune
  • Olive oil
  • 10 garlic cloves, diced
  • 2 tsp chilli flakes
  • 30g fresh parsley, chopped
  • 1 lemon, squeezed

Method

  1. Bring a saucepan of water to the boil and salt generously. Boil linguine as per cooking instructions on pack.
  2. Heat 2 tbsp of olive oil in a pan, then add garlic and chilli flakes. Cook on a low heat until golden-brown.
  3. Drain the linguine but save half a cup of the pasta water. Add the linguine, pasta water and a pinch of salt to the pan with the garlic and mix well on a high heat.
  4. Take off heat and stir in parsley and lemon juice until well-combined.
  5. Add parmesan, salt and pepper to taste.
  6. Finish by drizzling with as much olive oil as your heart desires!
